– 1 ripe banana, mashed – 1 cup grated zucchini (squeezed dry) – 1/3 cup maple syrup or honey – 1/3 cup coconut oil, melted – 2 egg – 1 1/2 cups whole wheat flour – 1 tsp cinnamon – 1/2 tsp baking soda – 1/2 cup dried cranberrie – 1/4 cup chopped walnut

Ingredients
Preheat oven to 350°F (175°C). Grease a loaf pan.
Mix mashed banana, zucchini, maple syrup, oil, and eggs.
– In another bowl, whisk flour, cinnamon, and baking soda. –
Combine wet and dry ingredients until just mixed.
Fold in cranberries and walnuts.
Pour into loaf pan and smooth the top.
1. Bake 50–55 minutes. Cool before slicing.
