If you’re tired of bland, boring rice, it’s time to try making it the Mexican way. Mexican rice, or Arroz Rojo, is bursting with flavor and has the perfect texture to complement any meal. Here’s how you can make it at home:
Rinse the Rice: Start by rinsing the rice under cold water to remove excess starch. This helps prevent it from getting too sticky.
Toast the Rice: In a medium saucepan, heat the vegetable oil over medium heat. Add the rice and cook, stirring often, until it turns golden brown. This adds a nutty flavor to the rice.
Sauté the Aromatics: Add the chopped onion and garlic to the pan, cooking until softened and fragrant, about 2-3 minutes.
Add the Tomato: Stir in the diced tomato (or tomato sauce), cooking for another 2 minutes until it softens and releases its juices.
Simmer the Rice: Pour in the chicken broth, cumin, chili powder (if using), and salt. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for 20 minutes, or until the rice is tender and all the liquid has been absorbed
Fluff and Serve: Remove the rice from heat and let it sit for 5 minutes before fluffing with a fork. Garnish with fresh cilantro for a pop of color and freshness
